Electric Cooking Recipes: Sausage, Egg, & Cauliflower Casserole (Low Carb, Low Sodium)

We are continuing our slow cooker series for the fall with this fun take on a “hash brown” recipe. By replacing traditional hash browns with riced cauliflower, we keep the net-carb count down and by focusing on lean turkey and egg whites, we lower the fat. Put all the ingredients in the slow cooker the night before to wake up to this yummy breakfast!

Sausage, Egg, & Cauliflower Casserole Ingredients:

  • 2 pkg. riced cauliflower, thawed
  • 1 pkg. turkey sausage crumbles, thawed
  • 2 cups 2% shredded cheddar cheese
  • 2 eggs, whipped
  • 1 cup 100% egg whites (can use 2 additional eggs if you are keto)
  • 1 cup 2% Fairlife milk (can use Heavy Whipping Cream if you are keto)

Directions:

  • Spray slow cooker with non-stick cooking spray.
  • Combine all ingredients in a slow cooker.
  • Cover and cook on low for 6-8 hours.
  • Serve.

Yield: 10-12 servings.
